Job Summary

This position will report to the Manager of Hissho’s Sushi and Craft Beer Bar located in Royal Oak, MI or Brighton, MI.  The opening supervisor will be responsible for opening the restaurant each day they work.  duties will include Checking dates and temperatures of products stored overnight, discarding expired product, making entries in the time / temperature log, performing food and beverage prep for the day, and ensuring  the work schedule provides for the days business.  They will pull cash drawers from the safe and count the draws and the safe and record that in the log.  The supervisor is also responsible for customer service during their shift.  As this is a new concept, servers need to be prepared to answer customer questions regarding all menu items, have knowledge of beverage choices, and be able to explain the concept to first time guests.  must ensure a positive company image by providing courteous, friendly, and efficient service to customers and Team Members at all times. All positions must be performed in accordance with team and store Standard Operating Procedures. Further, Team Members must be prepared and able to perform the duties inherent in other Team Member job descriptions wherever needed. All positions must strive to support Hissho core values and goals, promote national, regional, and store programs and initiatives, and ensure adherence to all applicable health and safety regulations.

Role and Responsibilities

  • Be knowledgeable of Food and Beverage menu.
  • Ensure equipment is operating and clean upon arrival
  • Reviews overall cleanliness of the restaurant and the thoroughness of the previous nights close.
  • Checks for catering or take out orders that came in overnight and updates production with Chef.
  • Counts the safe and puts cash drawers into the POS.
  • Starts a time and temperature log for the day.
  • Double checks the schedule and ensures adequate staffing for the day.
  • Pulls product according to build to’s for smoothie, juice, and breakfast food production
  • Covers, labels, dates, and stores all prepped items at the proper temperature.
  • Receives orders as they come in from vendors, following all procedures for checking temperatures, counting items against the invoice, and inspecting for damage.
  • Ensures wine bottles and beer kegs varieties match the name on the taps.
  • Greet Guests as they enter the restaurant.
  • Waits on Guests as a Server or Bartender as needed until staff arrives.
  • Answer any questions about the menu or the concept
  • Actively engages in suggestive selling.
  • Anticipate needs for refills, condiments, to go containers while customers are eating
  • Make suggestions for dessert or items to go.
  • Promptly provide guest check and process payment.
  • Thank the customers and invite them to return.
  • Wipe down tables and maintain the cleanliness of the dining area.
  • Complete any necessary side work.
  • Ensure Servers and Bartenders clock in as they come in for their shifts.
  • Provide status updates on customers and daily events to staff as needed.
  • Replenish prepped items as needed before end of shift.
  • Reconcile cash in drawers and safe before end of the shift
  • Ensure Time and Temperature log is complete.
  • Check for catering and special orders for the following day. Make sure they are communicated to the Manager.
  • Ensure Servers and Bartenders are set up for success before leaving.

 

Qualifications and Education Requirements

  • One-year prior full-service restaurant experience
  • One-year prior supervisory experience (In a restaurant is preferable)
  • Team Player and strong work ethic
  • Ability to lift up to 50 lbs.
  • Ability to effectively communicate in English
  • Able to work an 8 hour shift starting at 8am.
  • In an 8-hour work-day: standing/walking 6-8 hours.
  • Hand use: single grasping, fine manipulation, pushing and pulling.
  • Work requires the following motions: bending, twisting, squatting and reaching.
  • Exposure to FDA approved cleaning chemicals.
  • Exposure to temperatures: <32>90 degrees Fahrenheit.
  • Ability to work a flexible schedule including nights, weekends, and holidays as needed.

 

Preferred Skills

  • Experienced Server, Sushi experience is a plus.
  • Supervisory skills, including giving direction, effective oral communication, and demonstrates a history of taking responsibility for outcomes.
  • Ability to manage conflict and difficult situations.
  • Team player willing to cover other positions in the restaurant as needed.
  • Serv-Safe certified and knowledge of food safety standards preferr
  • Ability to sell proactively.
  • Ability to understand and convey to others the differentiating factors about Hissho products.
  • Ability to deliver information in a clear and respectable manner to fellow Team Members, customers, and vendors.
  • Ability to meet customer service expectations and standards in all interactions with customers, vendors, and Team Members.
  • Ability to follow directions and procedures; effective time management and organization skills.
  • Passion for Customer Service.
  • Strong work ethic and ability to work in a fast-paced environment with a sense of urgency.
  • Understanding of and compliance with Hissho quality goals.
