Job Summary

This position will report to the Managing partner of Hissho’s Sushi and Craft Beer Bars located in Royal Oak, MI and Brighton, MI.  The store manager will be responsible for operating the restaurant and overseeing all activities within it.  duties will include interviewing, hiring, training, and managing the performance of staff to meet Hissho standards.  The manager is also responsible for the profitability of the restaurant and will have direct control of the P&L by driving sales and monitoring costs on a daily basis.  As this is a new concept, managers need to be prepared to answer customer questions regarding all menu items, have knowledge of beverage choices, and be able to explain the concept to first time guests.  the manager will also be responsible for ensuring the strategic success of all marketing initiatives implemented by Hissho and the managing partner.  must ensure a positive company image by providing courteous, friendly, and efficient service to customers and Team Members at all times. Must lead by example to ensure All employees support Hissho core values and goals, promote national, regional, and store programs and initiatives, and ensure adherence to all applicable health and safety regulations.

Role and Responsibilities

  • Maintains proper staffing levels for the restaurant
  • Conducts new hire orientations and training
  • Continually works with the staff to improve customer service and efficiency
  • Ensure compliance with all state and federal labor laws
  • Be knowledgeable of Food and Beverage menu.
  • Conducts weekly inventories and calculates food and paper usage accurately
  • Orders necessary food and supplies from approved vendors in a timely manner
  • Submits payroll on a timely basis and ensures accuracy
  • Accurately reports sales as directed by the Managing Partner
  • Completes a weekly work schedule for staff to ensure adequate coverage for all shifts
  • Incorporates themselves into the schedule on a variety of shifts to cover busy periods
  • Interacts with guests daily and demonstrates excellent customer service
  • Greet Guests as they enter the restaurant.
  • Waits on Guests as a Server or Bartender as needed.
  • Drives sales through excellent customer service, sampling of product inside and outside the restaurant, suggestive selling, and engaging guests in educative discussions about the concept.
  • Answer any questions about the menu or the concept
  • Actively engages in suggestive selling.
  • Handles guest complaints as they arise and resolves appropriately
  • Effectively handles difficult situations with guests at the bar
  • Ensures catering orders are fulfilled and that there is enough staffing to handle catering without affecting customer service.
  • Receives orders as they come in from vendors, following all procedures for checking temperatures, counting items against the invoice, and inspecting for damage.
  • Ensures wine bottles and beer kegs varieties match the name on the taps.
  • Ensures that all food safety practices are followed by all staff, especially personal hygiene
  • Monitors food quality during prep and by checking orders before they go out to guests.
  • Implements sales building initiatives in collaboration with the Managing Partner
  • Develops and maintains positive work relationships with partner store managers, vendors, and local inspectors.
  • Takes the lead during busy periods to ensure food is cooked and delivered on time and to Hissho quality standards.

Qualifications and Education Requirements

  • One to three years prior full-service restaurant experience
  • One to three years prior restaurant management experience
  • Team Player and strong work ethic
  • Ability to lift to 50 lbs.
  • Ability to effectively communicate in English
  • Able to work a 10-hour shift starting as early as 6am or finishing as late as 11pm.
  • In a 10-hour workday: standing/walking 6-8 hours.
  • Hand use: single grasping, fine manipulation, pushing and pulling.
  • Work requires the following motions: bending, twisting, squatting and reaching.
  • Exposure to FDA approved cleaning chemicals.
  • Exposure to temperatures: <32>90 degrees Fahrenheit.
  • Ability to work a flexible schedule including nights, weekends, and holidays as needed.

 

Preferred Skills

  • Experienced Server, Sushi experience is a plus.
  • Supervisory skills, including giving direction, effective oral communication, and demonstrates a history of taking responsibility for outcomes.
  • Ability to manage conflict and difficult situations.
  • Proficiency in Excel and Word software.
  • Team player willing to cover cooking or serving positions in the restaurant as needed.
  • Serv-Safe certified and strong knowledge of food safety standards.
  • Ability to sell proactively.
  • Ability to understand and convey to others the differentiating factors about Hissho products.
  • Ability to deliver information in a clear and respectable manner to Team Members, customers, and vendors.
  • Ability to meet customer service expectations and standards in all interactions with customers, vendors, and Team Members.
  • Ability to follow directions and procedures; effective time management and organization skills.
  • Passion for Customer Service.
  • Strong work ethic and ability to work in a fast-paced environment with a sense of urgency.
  • Understanding of and compliance with Hissho quality goals.
